Can you tell me how I get into the layout to customise the code to use this with the Extended Info Page. I know I can find the actual page by going into Design/Library/Extended Info Pages but how do I get in to change the code?

If you locate any Layout in the Library, then all you need to do is double-click it to open it in an editor.

If you want to do this in the Design tab, there's another way. First start on the Content tab. In Product Details, select the Extended Info tab and then click the "Preview" button. You should see the Extended Info in the Preview pane. Now switch to the Design tab and you can edit it.
